Hubert Paulet 1er Cru Rilly Brut Rosé 2005 (OC6)

<p>As a child, Olivier Paulet had always wanted to be a magician... he now works the magic of fermentation and is determined to create a unique and individual range of wines from grapes sourced solely from the village of Rilly-la-Montagne. Champagne Hubert Paulet is a small family-run grower Domaine with 8ha of vineyards, all 1er cru status, on the north side of the mountain Reims. Olivier, who is the 4th generation, took over operations from his father in 1998 and slowly evolved the Domaine to accomplish his goals. Farming is &ldquo;lutte raison&eacute;e&rdquo;, where organic practices form the base of all decisions, eliminating the use of chemicals, and allowing grass to grow between vines. Grapes a highly sought after and half the crop is sold to a famous grande marque, leaving the remainder for Olivier to craft into pure, refined wines. In the cellar, both stainless steel &amp; concrete plus some old oak barrels are used depending on the cuv&eacute;e. Partial malolactic fermentation is employed for most wines as he believes a great balance is achieved through this process. The wines are stunning and it is the result of Olivier&rsquo;s determination and hard work to express the terroir of Rilly.</p>

Fresh red berries of cranberry, raspberry, and cherry with hints of orange zest on the nose. A dry and soft bitterness on the palate with notes of rose and blood orange. Persistent finish with exquisite clarity.
